groceries and recipes

as those of you with kids know, it's really hard to get out of the house with a little one. i have found that it takes careful planning just to go to the post office, let alone shop for groceries. in college (i went to byu-idaho) in such a small town where most college kids didn't have a car the local grocery store would let you shop, and then they would deliver your groceries (which was good, since i usually would walk to the store). in this time of my life and i found that it was hard enough to get out of the house, let alone have to haul in all my groceries from my car to my apartment i searched for delivering options. my new hero: www.albertsons.com i bet you didn't know that they deliver. they do, for only $10. so now i can take care of my little guy and have my food delivered straight to my apartment and i can focus on other things.

i've been trying to cook more now that i'm home, so i thought that i would share with you 2 recipes. i made pizza the other day on refrigerated biscuit dough (thanks pillsbury) but the best part was the pizza sauce -- so i thought i would share. it's the best and it has a littke kick to it.

INGREDIENTS:
1 tbsp veg oil
1/2 c chopped oinion
1 (6 oz) can tomato paste
6 oz water
1/2 tsp white sugar
1 tsp salt
1/8 tsp pepper
1/4 tsp garlic powder (i used minced garlic)
1/4 tsp basil
1/2 tsp oregano
1/4 tsp marjoram
1/4 tsp cumin
1/4 tsp chili powder
1/8 tsp pepper flakes

DIRECTIONS:
Heat oil in a small saucepan over medium heat. Saute onion until tender. Stir in tomato paste and water. Season with sugar and seasonings. Simmer 15-20 minutes.

6 CAN CHICKEN TORTILLA SOUP

INGREDIENTS:
1 (15 oz) can corn, drained
2 (14.5 oz) can chicken broth
1 (10 oz) can chunck chicken
1 (15 oz) can black beans, drained
1 (10 oz) can diced tomatoes with green chiles

OPTIONAL SEASONINGS:
pepper
cumin
chili powder
garlic powder
lemon pepper
...
DIRECTIONS:
open cans and pour everything into a large saucepan. simmer over medium heat until heated through. serve with tortilla chips, shredded cheese and a dallop of sour cream.

lately robby's work schedule has been crazy and i never know when he will be home, so planning dinner has been hard. this soup can be thrown together last minute and it's delicious. robby said a couple of times how good it was last night. it's easy, and it's only cans so you can keep all the ingredients on hand for when you need a quick easy dinner.
