recipe wednesday - perfect baked potatoes

so after much requests, here are my perfect baked potatoes. i actually use a potato pouch that my mom gave to me, but a kitchen towel works just as good.
...
1. scrub potatoes and then wrap in a paper towel. (there is no need to puncture them, i promise you will not blow up your microwave. ok, so seriously do not poke them with a fork!!)

2. wrap potatoes in a kitchen towel (100% cotton is probably a good thing). then microwave on high 5 minutes for the first potato plus 1 minute 30 seconds for each additional potato. (you probably don't want to do more than 5 or 6)

3. remove from microwave and shake onto a plate (careful, they are super hot!!) then slice in half lengthwise and make diagonal cuts. then smear on some butter.

4. then top with a mound of shredded sharp cheddar and pop it back into the microwave for another minute to melt it all up!

5. after the cheese is all melty smear on some sour cream and sprinkle on some salt and pepper. stir it all up so its well covered it all the melty goodness (i took the picture before i stirred it, it looks better this way!) and then enjoy, seriously the best potatoes ever. so fluffy and perfect. i can eat them everyday.
of course you can top with whatever you like. as you can tell i like my potatoes loaded with fatty cheese and sour cream. yum! (and yes both those potatoes are just for me! i'm hungry dangit! when aidan is awake and eating potatoes with me, i cook up a small one for him and just slice it into bite size pieces and give him some shredded cheese and he's in heaven too!!)

more cleaning - small victories!

alright, this hasn't been recent as i've been feeling not so great on my feet lately. arg, hopefully this passes soon. i don't remember being like this when i was pregnant with aidan (but robby says i was). needless to say i need to get cracking as we are having a party here at my house on saturday for aidan's birthday, wish me luck!!
...
i finally got my kitchen table cleaned off, no more christmas decorations out, huzzah!! (notice the clean counters in the background, nice!)

this picture does not even come close to showing how badly we needed to clean out rob's side of the closet! seriously, not even close. there is a MOUNTAIN of clothes hiding behing the door on the left -- which now has almost all been moved to a DI pile in another corner, maybe i'll post that picture later. needless to say rob's closet now looks better!

well i picked up aidan's toys in the living room, it looks much better now! he seems pleased!

next up, clean off the backside of "the barricade" also known as the dumping ground for my business stuff. and clean of my beloved printer, poor guy!!

oops, i did it again!

well we went over to my folks house for superbowl. my mom always puts out a dang good spread of food. this year it included buffalo chicken bites and my sister made lumpia (loompia!!) i decided to make a fruit tart. i recently learned how to make it at a church cooking class and it was delicious!
...
here are some pictures of all the delicious food to make you jealous! loook, 4 kinds of chips (lays potato chips, sun chips, round mission tortillas, and spicy tortilla chips made from homemade tortialls --- SOOOOO good! plus guacamole and salsa for your dipping pleasure!

here you can see the deviled eggs (not the best they had sweet reish in them, who puts sweet relish in deviled eggs? apparently my grandmother!) then you can see the broccoli and cauliflower with dip. plus pretzels and onion dip (made from scratch!!) for my hubby his favorite snack food!

when i walked into my folk's house and set the tart on the table my grandma came up and said, "i heard you made something you've never made before" it took me a minute to register what she was talking about, "oh yeah," i replied "i made this fruit tart, i hope it turned out ok ..." and then i added "but i'm also making something i HAVE made before" she turns to me confused and asked me "what?" and then i fill her in on what i was talking about, "I'M PREGNANT AGAIN!"

what a great set-up!! oops, we did it again! we are now expecting lil baird #2. ahhhhhhhh! that's right ... i'm pregnant ... AGAIN! didn't i just do this? i'm not ready to do it again! oh sheesh! what in the world am i going to do with 2 kids. seriously, what in the world. i'm not ready for another one!

we had already told my parents and robby's mom. most of the reactions have been great, which is excellent. rob's mom said, "i thought you were going to wait" and "i thought you were on birth control" thanks for being excited for us mom! (sarcasm) my parent's jumped up and down (ok ... bounced in their seats while at breakfast) and clapped and said "yeaaaaaahhhh!" much better reaction!! while my oldest sister just cackled into the phone! nicole was throughly excited as we'll both we pregnant together and our little ones will only be like 2 months apart! i actually told her first because i was freaking out when i found out and she is always the voice of reason and sanity (i'm sure she'll say she is not and that is is anything but sane, but to me she is!!!) she calmed me down and got me excited! thanks nikki, you're the best sister in the entire world!!!

this is what happens when we aren't feeling good

these pictures are old (we've since redecorated and moved things around), but my house looks very similar -- i just don't feel like getting the camera out and actually uploading the pictures!! this is what happens to my house when aidan and i both aren't feeling very good and don't have the energy to do anything!

on sunday during the superbowl aidan was acting very cranky. at first we just thought the party was too much for him. later he came up to me and i picked him up and he felt warm. when we came home we took him temperature and it was 101. we gave him tylenol and put him to bed. when he woke up at 10 o'clock we took his temperature again. it was now 104.3!!! so we threw him in the bath to try to get his temperature down. after 20 minutes it had come down to 103.2. we called the after hours phone number for the pediatrician and left a message. she called me about 30 seconds later. we talked for a bit and she told me to give him some motrin as well. she wasn't concerned because aidan was talking and smiling and playing. she said it would have been a different story had he been lathargic. we finally got him back to sleep and he only slept anywhere in between 1-2 hrs all night long. needless to say it was a long night. monday night wasn't much different and last night he didn't sleep all that well either. needless to say i'm exhausted! hopefully he starts feeling better so i can start being productive!!
